Traditionally, it was a way of making tougher cuts more tender and versatile (which is part of why we love it).

When meat is grass-fed, traditional butchers often enhance its quality through dry-aging. This process, which can last from 10 days to 90 days or longer, concentrates the beef’s flavour and nutrients by reducing its water content. Unlike the “wet-aging” often marketed by supermarkets, dry-aging creates a nutrient-dense, richly flavoured product.

In some cases, fillers like soy protein, textured vegetable protein, other additives, even breadcrumbs, and sugar.
Preservatives and additives, like sodium metabisulfite, can be used to extend shelf life without labeling, maintaining the color and shelf life.
Carbon monoxide is added to the vacuum pack. This allows the beef to maintain the “red” color, which is more concerning when spoiled or past the sell-by date—it appears fresh when it's unhealthy.
Mincing: Different cuts and different animals. Your beef may have a horse in it, but generally, this increases the risk of bacterial contamination.
