Shape into meatballs roughly an inch thick. Pan-fry on medium-high with a little tallow or ghee, turning to cook all sides — about 2 minutes per side, 8–10 minutes total. Add garlic and red onion, let them soften in the meat juices and rendered fat, then stir through tomato paste and reduce for 10 minutes. Finish with torn basil and grated Parmesan. Serve over gluten-free pasta, or the best Italian pasta you can find.
Cooking Tip
Take it out of the fridge 20–30 minutes before cooking, so it cooks evenly all the way through.

The marrow is folded through the mince for a reason. As it renders, it doesn't just add flavour, it carries it. Every onion, every clove of garlic, every spoon of sauce picks up that depth as it cooks down. Keep the heat on medium. Rush it, and the marrow renders too fast and gives up its fat before it's had the chance to do its job.

Yes! Our meats are boxed with ice bags, which keep them chilled rather than frozen. This means you can choose what to put in the freezer, what to put in the fridge and what to chuck straight in the pan.
How long does delivery inside the UK take?
All our products are made to order, which might add up to 24 hours on to the delivery time – but your order should still be with you within three working days.
Is the packaging recyclable?
